Still appreciating this coffee.
My only issue is that the grind appears to be too coarse for my setup.
Have Gaggia Classic Pro with VST 15g basket. Despite careful tamping the extraction takes less than 10 seconds and gives 40g of espresso.
There is a mod for my GCP which reduces pressure from 12 to 9 bars at the portafilter. Perhaps I will need to try that?

We use a mid-range espresso grind, as it suits most customers, though it may not be ideal for your preferences.
You might like to try increasing your dose by 1–2 grams to see if that helps.
Alternatively, grinding the coffee yourself is always the best way to get exactly what you want.
